Vegan Double-Double Burgers & Field Roast Sausages
Judi reminded me that we made these burgers with special sauce from Chloe's Kitchen recipes a couple of years ago and they were yummy. So I decided to make them for a summer BBQ this year. They were great! They are my favorite burgers now (with the sauce, they are amazing), although Larry likes the black bean carrot burgers a little more. I also sautéed red & yellow pepper and a red onion, with a little garlic, to top of Italian Field Roast sausages. Oh my, that made them so much better. I used tempeh (as in Chloe's book's recipe) and lentils from Trader Joes that were slightly spiced (in vacuum packaging, sold in produce area). Makes 8-10 single burgers.
Ingredients
2 T canola oil
1 onion, chopped
2 cloves garlic, chopped
1 8 oz package tempeh, steamed (8 oz pkg at Trader Joes)
1 15 oz package cooked lentils (17 oz pkg at Trader Joes)
1/2 cup flour
1 cup walnuts, toasted
1 tsp dried basil
1 tsp salt
1 tsp ground pepper
Special sauce:
1/4 cup soft tofu
1 clove garlic
1 T mustard
1 T ketchup
1 T agave or maple syrup
1/2 tsp salt
2 T pickle relish
1 T chopped fresh dill
Instructions
Steam the tempeh for 10 minutes, in microwave steamer or on the stove. Saute onion in oil until lightly brown; add garlic and saute a couple more minutes. Take off stove and let cool.
Toast walnuts. Mix dry ingredients (flour, basil, salt, pepper) in bowl.
Mix all burger ingredients in food processor in 2 batches (half each batch): tempeh, lentils, onion/garlic mix, tempeh, lentils, dry ingredients, walnuts. Pulse until fairly finely ground. Form mixture into patties in the palm of your hand. Fry or bbq about 5 minutes on each side until browned on both sides. (If used oil, remove and drain on paper towels.)
Make the special sauce: Combine tofu, garlic, mustard, ketchup, maple syrup & salt in food processor. Process until smooth. Transfer to small bowl and mix in relish and dill.
Serve burgers with lettuce, tomato, red onion, and special sauce. Yum!
