Easy Delicious Fruit Pie

During a trip to Nebraska last week, one of Dad's friends gave him a bag of about 30 fresh-picked peaches. I decided to try to make a pie, and after a little googling, came up with this easy adapted recipe. It was delicious! I tried it at home with our ripe pears and blackberries and it worked just as well. Use the Wholly Wholesome Spelt pie crust from Whole Foods to make it vegan (it's delicious!). Optionally top with good vanilla ice cream; if you want to keep it all vegan, try Almond Dream Vanilla.

About 10 fresh peaches (or other fruit, like pears and blackberries)
2 deep-dish pie crusts (like Wholly Wholesome)
1/2 cup brown sugar
1 tsp vanilla
1 T cinnamon
1 tsp lemon juice or white balsamic vinegar

Cut up the fruit (no need to peel). Don't be shy, cut up a lot; it will cook down. Mix with other ingredients. Pour in one of the deep dish crusts. Carefully take crust out of second pie plate and put it on top.  Make some x's in the top with a k…
